The Bandit Axe has no reach and is good in spite of this. I don't care for the moveset of most of the hammers but they're all fine. My personal favorite is the Craftsman's Hammer and it has easily the best moveset in the class. The only strength spear is the Gargoyle Bident.Bleed is bad for PvE. Depends on what you mean by DEX weapons. There are some fairly slow weapons with good DEX scaling for instance. And the Rapier certainly isn't a STR weapon but it has pretty mediocre DEX scaling (and is a DPS machine in spite of this -- mostly because it's fast enough to take advantage of the damage boost rings in the game).
